Seafood
In Pula, as in most Istrian towns you can try fish specialties as frog-fish under a baker's lid, grilled sea bass or buzara (sauce) prepared of scampi from the Kvarner bay and shellfish specialties such as clams, oysters and mušule (mussels). In Pula they will offer you delicious brodet (a mixed fish stew with rice), and surely try a black cuttlefish risotto. |

Istrian prosciutto (smoked ham)
Prosciutto(smoked ham) is a cure meat product made of pork leg which is cured salted and peppered on cold northerly winter wind (bura) or by the fireplace. Istrian prosciutto (smoked ham) is aromatic and specific by its way of preparation and maturation, it is cured on cold northerly winter wind (bura), and it is served thinly cut as a side dish, generally with sheep milk cheese, olives, homemade dry-cured sausages and ombolo (a meaty part of pork cutlet). |

Maneštre (vegetable stews)
Try the Istrian maneštra, a traditional thick soup which represents one of most well-known traditional Istrian cuisine dishes. The basic ingredients of maneštra are potato and beans to which a preparation of bacon and garlic is added and young corn, barely, cabbage or some other vegetables. Very often a smoked ham bone is added, and the ones to which young fennel is added are of specific flavor. |

Istrian pasta
The most well-known types of homemade Istrian pasta are fuži (a simple, triangular domestic paste) and njoki (dumplings or gnocchi). Fuži are made of eggs, flour and water, and njoki are made of paste which basic ingredients are flour, eggs and potato. They are most often served with diverse sauces from which the most traditional is žgvacet (a type sauce). Surely try also stuffed ravioli and posutice (homemade pasta) with fresh cabbage which when olive oil and garlic added, have a really specific flavor. |

Truffles
The unique gastronomy delicacies from Istria are surely truffles. Truffle is a rare and extremely admired mushroom which you can try in Istria during the whole year. From the Old Romans table till today, that most famous aphrodisiac of intensive and unique scent remained the absolute king of cookery. In Pula’s restaurants they will most probably serve you fuži or njoki with truffles and beefsteak and cheese with truffles. |
