Must try local food

Loin and sausages

A must try in Croatia is the wonderfully seasoned dish of loin and sausages. This features on menus throughout Istria, but is a particular speciality in Rabac. Wine, garlic, rosemary and bay leaves are mixed with the choicest pork meat to create sensational tasting sausages grilled and served with sauerkraut.

Wild asparagus

Springtime brings a taste of the Mediterranean countryside to restaurants in Croatia. During April, groups of elderly women sell bunches of wild asparagus from Rabac’s roadside, destined for dining tables throughout Istria. A favourite way to serve this seasonal delicacy is in a fritaja, mixing asparagus tips with scrambled eggs.

Meat dishes under 'čripnja'

This unique method of preparing food in Croatia cooks meat under a čripnja, a metal dome-shaped lid. Ingredients such as lamb and chicken are place in pan with potatoes and aromatic herbs from Rabac’s countryside, covered with the čripnja and cooked over hot coals.

Seafood

With the Adriatic on the doorstep, any visit to Istria wouldn't be complete without sampling the dazzling range of seafood dishes in Rabac. Menus tempt taste buds with a choice of fish, mussels, crab and scallops. However, the area’s must-try dish is brodetta, a hearty seafood stew served with polenta.

Kroštule

It’s customary in Rabac’s restaurants for diners to be offered kroštule at the end of their meal. Kroštule are simple, but not to be missed, sweet home-made pastries, fried to a crispy texture, often accompanied by a coffee or Istrian brandy.

Krafi

Considered the queen of pasta in Istria, krafi is one on the must try dishes of Rabac. Like a version of sweet ravioli, krafi are pasta squares filled with a blend of eggs, walnuts, raisins and cheese served warm in a sweet sauce.

Pasutice with cod fish

Pasta dishes are popular all over Istria, but Rabac has its own speciality called pasutice, traditionally eaten during Lent in Croatia. One of the most popular ways to serve pasutice is with salted cod tossed in warm olive oil.

Istrian supa

An essential must try experience in Rabac is to share a jug of Istrian supa with a group of friends at a local tavern. Part drink, part soup, Istrian supa is a wonderfully original concoction of red wine, olive oil, pepper, sugar and toasted bread and is served in an earthenware jug.
